Madhouse Recipe : Sophie's Fridge Cake


Now that she's 11, Sophie doesn't like helping me out in the kitchen as much - she likes taking over and doing it all herself then surprising me with the results ! She even does the washing up afterwards - I've trained her well ! Earlier in the week, she knocked up a rather lovely fridge cake and offered to share the recipe on my blog.

Sophie's Fridge Cake

ingredients :

100g biscuits, crushed (Sophie used Hovis Breakfast Biscuits but anything like digestives will do)
100g (one bar) milk chocolate
a generous squeeze of runny honey
50g butter
a handful of dried apricots, chopped
a handful of dried cranberries
a handful of cornflakes


Put the biscuits in a freezer bag and crush them with a rolling pin.

Put the chocolate, butter and honey in a bowl and heat in the microwave, in ten second bursts, stirring until the chocolate and butter have melted.

Add the crushed biscuits, apricots, cranberries and cornflakes and stir until everything is nicely covered in chocolate.


Press into a greased baking tray or cake tin. I gave Sophie my cake tin with a removable base as this made it easier to get out at the end.


Place in the fridge for at least two hours until the chocolate has set and you can cut it into slices without it all falling apart.

The fridge cake disappeared in record time and Madhouse Daddy has already asked Sophie to make another one tomorrow, which made her very proud !
