When I picked up this week's veg box and saw the small yellow peppers nestling on the top, I just knew that they were begging to be stuffed and baked. Then a vague memory surfaced of something that I'd seen on Chez Maximka about spooky stuffed peppers for Halloween and that I had always been meaning to try so, despite it being totally the wrong time of the year, that's what I decided to make ! I thought they looked fab and the kids loved the look of them !
Spooky Stuffed Peppers
ingredients (for 5 portions) :
5 small yellow peppers (or any other colour)
a 200g pack of mince (I used lamb mince but pork/beef/chicken/Quorn would all work too)
1 onion, finely chopped
2 spring onions, sliced
leftover cooked rice (or a sachet of Express Rice would be perfect)
a handful of raisins
seasoning and spices to taste - I added garlic granules, Turkish meatballs spice, seasoned sea salt, mint
150g grated cheese
In a large saucepan, gently fry the onion and the mince. Season to taste, adding herbs and spices if desired. Turn off the heat, add the cooked rice and stir until combined. Mix in the chopped spring onion and raisins.
Chop the tops off the peppers, remove the seeds and cut a face in the sides so that they resemble Jack o' lanterns. Use the rice and mince mixture to stuff the peppers. Sprinkle with grated cheese and cook in the oven at 180° for 1/2 hour.
Serve with salad and tomatoes.
