On a recent #KitchenClearout linky, Galina from Chez Maximka shared a recipe for Baked Halloumi with Caramelised Onions and Tomatoes. This combination of flavours appealed to me - the salty cheese offset by the sweetness of the onions and tomatoes - so I decided to give it my own twist.
Halloumi drizzled with Pomegranate Molasses
ingredients (for 2) :
1 pack of halloumi
drizzle of olive oil
1 onion
3 mushrooms
1/2 a red pepper
1 tomato, cut into wedges
pomegranate molasses
Slice the onions, red pepper and mushrooms and fry in a drizzle of olive oil for 5 minutes, stirring frequently so that they don't stick.
Add the wedges of tomato, toss them around until they start to caramelise, then push all the veggies over to one side of the frying pan. Lay out the slices of halloumi on the other side of the pan.
Leave to start caramelising without moving it around for a few minutes, then flip each slice over to cook the other side. Move the vegetables around so that they don't burn though.
Heap the vegetables on to a plate then arrange the halloumi slices on top and drizzle with pomegranate molasses. You could also start with a base layer of rice if you want something more substantial. This is great as a quick, simple meal after a busy day at work and the flavours work really well together.

ReplyDeleteI discovered it in Turkey where they drizzle it on everything and have since adopted it - if you search pomegranate molasses on my side bar, there are lots of recipes, including salmon, Turkish pizza and all sorts !
