The kids have gone back to school and it's almost as if the weather has decided that that's it, summer is over and it's time to get all autumnal. It's been chilly, foggy and drizzly here all day today. Not a good start to the new school year. This roundup will feature the summery dishes that were linked up in August - those holidays already seem like a distant memory !
Jane at Onions and Paper started us off with Portuguese Carrots, just like she tasted on holiday. They look lovely so I'm definitely giving these a go.
Baked halloumi with caramelised onions & tomatoes is a lovely combination from Galina at Chez Maximka and perfectly timed too, as I was just wondering what to do with a pack of halloumi in the fridge for tea tonight !
Mediterranean picnic bread was inspired by the novel Under A Sardinian Sky and the contents of my fridge. Now that I'm taking packed lunches to work, I'll have to make this again before the summer is well and truly gone !
Kentucky Hot Browns is another bread-based dish that was great for clearing out the odds and ends in the fridge - toast topped with bacon, tomatoes, leftover chicken and parmesan-packed Mornay sauce.
Chicken & leek stroganoff was a nice twist on an old classic and used up some stroganoff spices that were lurking on the shelf.
And finally a quick midweek chicken & noodle stir fry was a simple but tasty way to use up some noodles out of the last Degustabox.
