Healthy lunch idea : Tuna & Veg Wrap


I'm feeling very virtuous today. It's my day off so, after dropping the kids off at school, I jumped straight in with a session of Leslie Sansone's Belly Blasting Walk - phew ! I didn't want to undo all my hard work at lunchtime so I went scouring the kitchen for a healthy option. This Tuna & Veg Wrap ended up being surprisingly delicious and much more waistline-friendly than the usual tuna mayo sandwich. I decided to use a dollop of the Branston Mediterranean Tomato Chutney from last month's Degustabox to jazz it up a bit.

Healthy Tuna & Veg Wrap

ingredients :

1 wholemeal wrap
1 small can tuna in brine
1 small can sweetcorn
1 small carrot
6 green olives
1tbsp capers
2 tbsp Branston Mediterranean Tomato Chuntney

to garnish :
1/2 tomato
1 pickled dill cucumber


Drain the tuna and sweetcorn and finely slice the carrot. Cover the whole surface of the wrap in tuna then line up the carrot sticks down the middle. Scatter the rest of the ingredients (sweetcorn, olives, capers) over the top and finsih with a few dollops of chutney to add some moisture and a bit of sweetness.

The idea was to roll it up tight and slice it into pieces like sushi so that the carrot would look pretty but I ended up overstuffing it ! A cocktail stick with an olive on the end helped hold it all together though.
