Who needs food colouring when you can get soup this vibrant with just a few natural ingredients?! The main ingredient is frozen peas so it can be made in minutes and it's really satisfying.
Pea & Bacon Soup
ingredients :
200g bacon pieces/lardons
1 large onion
1 large leek
2 cloves garlic
500g frozen peas
2 stock cubes (ham or chicken)
a dash of Worcester sauce
salt and pepper, garlic granules, dried thyme
Roughly chop the onion and garlic and put in a large pot along with the bacon. Fry for 5 minutes.
Chop the leek and add to the pot. Fry for a couple of minutes.
Add the frozen peas and cook until the kettle has boiled !
Pour on enough boiling water to cover the peas, plus a bit extra. Crumble in the stock cubes, stir and leave to simmer for 10-15 minutes. Add the Worcester sauce, garlic granules, thyme, salt and pepper to taste.
Whizz with a stick blender and add a bit extra water if it's too thick. (Don't make it too watery though.)
Sprinkle over a few garlic croutons if desired, or serve with a hunk of crusty bread.
I just have to make this - I love pea & bacon or ham soup.
ReplyDeleteIt was the first time we'd tried pea soup because it didn't sound very appealing to be honest, but it was delicious so I'll definitely be making it again. So quick too - hardly any peeling or chopping and very quick cooking time.
DeleteA lovely winter warmer- I make something similar using a hock and cook it in its own stock then add lentils ,pearl barley and root veg
