This is the ultimate Friday night meal at The Madhouse. It's quick and easy, it's frugal, it uses up everything that's still in the veg compartment of the fridge before we go shopping on Saturday and it packs all 5-a-day into one kid-friendly meal !
Quick 5-a-day mince one pot meal
ingredients :
1 pack beef mince
2 onions
2 carrots
3 potatoes
1 large leek (or 2 small ones)
4 mushrooms
any other veggies (cooked or raw) that need using up
a can of sweetcorn
2 beef stock pots/cubes
Fry the onions in a little olive oil for a couple of minutes to release the fragrance then add the mince. Cook for 5 minutes, stirring and breaking up the mince. Finely chop the potatoes, carrots and leeks and add to the pot. Cook for 5 minutes, stirring, then add the mushrooms, sweetcorn and beef stock.
Leave to simmer for 10-15 minutes until the potatoes, carrots and leeks are soft.
