Take two slices of freshly baked bread. (Or you could buy a crusty loaf from the baker's.)
Spread one side of each slice with margarine or butter.
Heat a frying pan and lay one slice of bread buttered side down. Lay slices of beetroot on top. (Freshly baked or boiled, not pickled - although that might work too. Let me know if you try it !)
Add a layer of goat's cheese.
Add some fresh basil.
Slap the other slice of bread on top, buttered side up. Press down on top slightly with a fish slice then carefully flip the whole thing over. (You might like to put a plate on top then turn the whole frying pan over before sliding it back in.)
Wait a few minutes for the second side to toast slightly then transfer to a plate and cut in half.
It's a nice refreshing mixture of flavours and is a more summery option than the usual heavy cheese and ham options.
