I love cooking from scratch but some days, if we've been out on a long walk all afternoon or if it's been a hectic day at work, I just want to grab something out of the freezer and have dinner on the table in half an hour. Birds Eye recently got in touch with some new ideas for scrumptious spring suppers and sent us some vouchers to give one a try.
We recreated the Mediterranean Cod with Couscous and Grilled Veg, the only slight tweak being that I bought a pack of Crunchy Tortilla, Chilli & Lime Coated Fish Fillets from the Inspirations range, rather than the Bake to Perfection Cod Fillets In A Tomato and Rosemary Sauce, as suggested in the recipe. It took 10 minutes to chop the veg and grab the fish from the freezer plus 25 minutes in the oven and required absolutely zero effort. Another bonus is that it uses nothing but store cupboard and fridge staples so you should be able to whip it up at a minute's notice.
Mediterranean Cod with Couscous and Grilled Veg
Ingredients
1 courgette sliced
1 red onion sliced
1 tbsp olive oil
150g dried couscous
175ml boiling water
1 Birds Eye Bake to Perfection Cod (Cod Fillets In A Tomato and Rosemary Sauce)
1/2 Sliced Red Pepper
1/2 Sliced Yellow Pepper
Method
Preheat oven to 190°, gas mark 5
Cook the Bake to Perfection Cod (as per pack instructions)
Mix the vegetables with the olive oil, put on a baking tray and roast in the oven for 30 minutes or grill on a medium to high heat for 10 minutes
Place the couscous in a bowl and pour over the boiling water.
Cover for 5 - 10 minutes, then fluff with a fork.
Mix the grilled veg in with the couscous and serve with the Cod and Mediterranean sauce over the top.

Thai Fish Burger
Ingredients :
2 tbsp Amoy Thai Sweet Chilli Sauce
2 Birds Eye Cod Fish Burgers
2 Cod Fish Fillet Burgers
1 Grated Carrot
1/3 Cucumber cut into sticks
1/2 Lime
1/2 sliced Red Pepper
2 Warburtons Thins
Method
Cook the Birds Eye fish burgers as per the pack instructions.
Dollop the chilli sauce onto the bread
Place the burger on top of the bread and pile on the peppers, carrots and cucumber
