The weather has turned distinctly chilly and autumnal today so I wanted some serious comfort food that was quick to throw together. This fit the bill perfectly.
Sizzling Sausage Stew
1 pack of 8 sausages
1/2 red pepper
1/2 yellow pepper
a handful of tiny cherry tomatoes (using up the last of the crop from the patio)
4 big mushrooms
1 tin baked beans
1 tin chopped tomatoes
herbs and spices of choice : I used smoked paprika, bbq seasoning, garlic pepper, thyme, oregano
Fry the sausages in a large pan, shaking the pan from time to time so they don't stick. Chop the vegetables into large chunks and add to the pot. Cook for 10 minutes until the vegetables are tooth tender. Add the seasoning and stir.
Pour in the baked beans and the chopped tomatoes and warm through, without bringing to the boil.
This was delicious served with baked potatoes but would also go with mash, boiled potatoes or rice.
