You can't beat a steaming bowl of thick, warming soup on a cold autumnal evening as the ultimate comfort food, which is why I decided to call this an Autumnal Hug In A Bowl. It's low fat, low calorie and packed with vegetable goodness.
Autumnal Hug In A Bowl
ingredients :
1/4 pumpkin
2 carrots
2 parsnips
3 potatoes
3 mushrooms
2 tomatoes
2 onions
a handful of kale
1 litre water
1 Knorr Vegetable Stock Pot
1 Knorr Beef Cube
1 Knorr Garden Herbs Flavour Pot
Peel and chop all of the vegetables. Put them in a large pot of boiling salted water and cook for 10 minutes. Use a stick blender to create a thick puree (you can leave some lumps if you prefer a slightly chunky texture, or even remove half, blend half then return the large chunks to the pot).
Add the extra water and the stock pots/stock cube. Heat until it reaches a vigorous simmer then reduce the heat slightly and cook for a further 20 minutes for the flavours to develop.
At the last minute, you can add a swirl of cream, a cheese spread triangle or a sprinkle of grated cheese. A chunk of crusty bread is the perfect accompaniment (slathered in butter which will melt as you dip it into the hot soup).
This is a great way of using up any odd veggies that are on the turn in the bottom of the fridge before they go mouldy !
