We love fruit salad here at The Madhouse. It's the perfect healthy dessert that the kids can help put together. In my Colombian-themed Kitchen Trotter box, there was a recipe for fruit salad with a ginger twist.
It used three ingredients from the box - panela (solid brown sugar), guava jam and crystallised ginger - but you could use other types of jam and sugar instead.
Fruit Salad with Ginger Sauce
ingredients :
a selection of seasonal fruit of your choice (as it's a Colombian-inspired dish, it would be good to include something tropical like mango, pineapple or papaya)
a squeeze of lime juice
a splash of orange juice
8tbsp guava jam
1tbsp runny honey
1tbsp shaved panela (or brown sugar)
1tbsp chopped crystallised ginger
Put the jam, honey, panela and crystallised ginger in a small saucepan, bring to the boil, constantly stirring, then leave to cool.
Meanwhile, peel/wash the fruit and chop into chunks. I used an orange, a satsuma, a mango, a banana, two pears, a plum, an apple and some grapes.
Put it all into a large bowl and toss in a little orange juice and a squeeze of lime juice. Mix it all up and chill in the fridge for half an hour.
Drizzle over the sauce just before serving - it's very sweet so you only need about 1tbsp per person.
