This may look pretty but it's actually even easier than making a pie. You could use any filling you like as long as it isn't too runny - sausagemeat, curried chicken, roasted Mediterranean vegetables, ... I had some baked potatoes to use up so I thought the classic combination of cheese and bacon would go well with it. This can be served hot or cold so it could be used for packed lunches or picnics - defintely more exciting than soggy sandwiches !
Cheese, Bacon & Potato Wreath
ingredients :
1 pack ready made puff pastry
200g bacon lardons
1 onion
2 mushrooms
200g grated cheese
2 leftover baked potatoes
milk (to brush)
Cut the puff pastry into long triangles and arrange in a wreath shape on a baking tray.
Fry the bacon and onions.
Add the mushrooms and potatoes.
Stir in the cheese and turn off the heat once it's all melted.
Place dollops of the mixture around the inner edge of the wreath and pile more on top until it's all used.
Fold the pointy ends of the triangles towards the centre and push under the mixture.
Brush with milk and bake at 180° for 20 minutes or so until golden brown. This could be eaten as it is for brunch or served with salad or mash and veggies for a complete meal.
