Ever since I received this rather fabulous paella kit, I've been wanting to try it out.
Inside, you get a bottle of olive oil, a little bag of paella rice and a box of five sachets of paella spice, along with a traditional paella pan. The only problem is, it's designed for two people so I wasn't sure it would make a paella big enough for five. In the end, I decided to use my regular wok.
There are as many different recipes for paella as there are people, so you can basically use whichever combination of meat, seafood and vegetables that you like. I had chorizo and chicken in the fridge so I went with that, but it would be nice with fish, prawns, calamar (squid) or mussels too.
Chicken & Chorizo Paella
ingredients :
a drizzle of olive oil
2 onions
1/2 red pepper
1/2 green pepper
1 clove garlic
2 cooked chicken breasts
1 chorizo
1 cup frozen peas
2 tomatoes
200g paella rice or long grain rice
2 cups chicken stock
1 sachet paella spice
Heat the oil in a large pan or wok. Fry the onions, red and green peppers and garlic. (Add the chopped chicken breast if using raw.)
Toss in the rice, stir and cook for 1 minute.
Add the chicken stock.
Add a sachet of paella spice (or make your own with a mixture of salt, pepper, smoked paprika, saffron, Cayenne pepper, garlic powder and cumin).
Add the chopped cooked chicken and chorizo, as well as the frozen peas and tomatoes.
Cook for about 15-20 minutes, stirring from time to time and adding extra stock or water if necessary, until the rice is cooked through and the liquid completely absorbed.

I love cooking Paella. I love the idea of this kit & what a great gift idea. I always struggle to think of something to get 1 of my sisters for her birthday - think I've just found her next pressie.
