New Covent Garden’s Soup of the Month for December - Emma Bremner’s ‘Festive Parsnip & Honey’ - is the last one chosen from the nation’s recipes. They asked the public to dig out their most cherished Christmas recipes and capture their favourite festive flavours in a bowl of soup.
Well, I have to admit, I wouldn't have picked parsnip and honey as particularly festive flavours but it is a lovely soup that makes a nice change when you're all turkeyed out and want a light supper to combat all the festive over-indulgence.
Parsnips already have a very sweet flavour so the honey makes it almost too sweet for me but the addition of cream gives it a very mellow flavour. I do like to sprinkle some barbecue seasoning or chilli flakes over the top to give it a little kick but the kids love it as it is.
A half-carton serving contains 135 calories, 5.4g of fat (of which 2.7g saturates) and one of your five a day.
