Breakfast is often the last thing on people's minds on Christmas morning - the kids are excitedly ripping wrapping paper off the presents under the tree and opening their stockings, Dad is busy running around trying to find batteries and that pesky Phillips screwdriver to get into the battery compartment on the new toys, cursing under his breath because he's probably just collected it up in the bin bag full of paper and stuck it in the recycling bin, and Mum is doing battle with a turkey that can barely fit inside the oven !
But breakfast is the most important meal of the day so once everything (and everyone !) has settled down a bit, it's nice to sit down to a special breakfast to kick off the festivities.
Here at The Madhouse, we like to have a special festive breakfast but it needs to be simple as things are already hectic enough ! We knock up a batch of smiley face pancakes the day before (so they just need to be reheated in the microwave for a few seconds) and serve them with a glass of Shloer for the kids and bucks fizz if stress levels are already soaring for the grown ups ! These are lovely as they are or topped with jam, chocolate and hazelnut spread or lemon and sugar. If you want something extra festive, you could even top them with brandy butter.
The kids love copying the faces on the pancakesthey have on their plates and usually have a grin just as big as the one you can see on the bottom pancake ! After breakfast is the time we phone around the grandparents and close family that we won't be seeing on the big day, to wish everyone a very happy Christmas.

That's my kind of brekkie, we love pancakes, my DH always goes for the overload of cream with chopped bananas, I cannot possibly eat it the way he does, as I think I will immediately gain a kilo of weight. lol
