A few months ago, I picked up a jar of authentic Polish Sauerkraut in a foodie market that we visited. It's been sitting in the cupboard ever since because I couldn't decide what to do with it ! When I started having one of my traditional kitchen cupboard clearouts, I decided it was time to use it and came up with a Sauerkraut Bake recipe.
Sauerkraut Bake
ingredients :
1kg Maris Piper potatoes
25g butter
500g sausage meat
1 big jar of sauerkraut
2 onions, chopped
1 tsp ground cumin
a drizzle of olive oil
salt, black pepper
Peel the potatoes and boil them in salted water for 15-20 minutes until cooked through but still firm. Drain, chop into bite-sized pieces and place them in an ovenproof dish. Dot with the butter.
Gently fry the onions in a drizzle of olive oil until soft and translucent but not yet going brown. Season with salt, pepper and cumin.
Drain the sauerkraut and add to the onions. Stir through to combine the flavours.
Break the sausage meat into small pieces and dot over the potatoes. (You can pre-cook it if you prefer.) Pour over the sauerkraut/onions and put in the oven for 20 minutes until piping hot.
