At the start of the summer, Rodda's - famous for their luxurious Cornish clotted cream - put out a request for baking tips to be featured on the underside of their packaging. I sent over a couple and was honoured to discover they'd been picked.
The first one you can see on their facebook page - "For instant crumble topping, flavour some porridge oats with cinnamon and crunchy demerera sugar before stirring in a few spoonfuls of butter. Sprinkle over fruit and bake in the oven until browned". The second one went out on their printed cardboard sleeves - "Whether it's ice cream or apple pie, most desserts will taste better if you leave them at room temperature for ten minutes before serving them."
As a thankyou for sharing my top pud tips, they sent through the fabulous selection of goodies that you can see above, including their clotted cream but also butter, fudge and shortbread - yum !
In honour of tonight's Great British Bake Off finale featuring Victoria Sponges, Rodda's have shared their recipe for baking the sponge, as well as a 'how to' video for doing the filling it 'the Cornish way'. You can see the recipe and video on their website here.
