Well, I've already shown you our two (very successful, even if I say so myself !) cooking challenges using Provamel Botanical Yogurts - firstly the impressive Autumnal Fruits Pavlova (here) then the deceptively simple Strawberry Eton Mess with Provamel Lime and Lemon Balm Yogurt and Lime Syrup (here). They were so popular with the kids that Sophie said I should ask if there were any more recipes to try, and that reminded me that in fact there are some more and, more to the point, they're sitting in my email inbox ! So I've decided to share them with you too ! Enjoy !

2 tbsp honey
150g soya cream cheese
1 ½ Braeburn apples, cored and sliced
100g digestive biscuits, crushed

Add 80g of melted soya margarine to the crushed digestive biscuits and stir until the crumbs are evenly coated.
Divide the crumbs between four ramekins or glasses and gently press into the base. Pour in the yogurt mixture and place in the fridge to chill and set for about 2 hrs.
Just before serving the cheesecakes, add the remaining soya margarine to a small frying pan and heat over a low flame. Add in the apple slices and sprinkle with the brown sugar. Cook for about 3-4 mins until the apple is caramelised.
