The Lunch Less Ordinary Blogger Challenge #1 : How many ways can you eat a tomato?

I think my reputation has preceded me ! I always say that here at The Madhouse, we embrace any crazy challenges that are laid down for us, so when Mission Deli Wraps got in touch to ask if we'd join in with their Lunch Less Ordinary Blogger Challenge, we couldn't possibly say no ! They are hoping to inspire the nation to do something more fun, exciting and a little less ordinary over lunch. We can do that !

For the next four weeks, every Monday will see a new email landing in my inbox outlining four fun or just plain crazy challenges and we have to rise to at least one of them.


1) Make an indoor camp for you and your little ones to enjoy an adventurous lunch in
2) Make lunch for your neighbour – either at work or at home!
3) How many ways can you eat a tomato – inspired by La Tomatina, we challenge you to use tomatoes in every lunch you make this week (different each day!)
4) Put the kids in charge of lunch for a week.

I had a look at their Facebook page for inspiration (and to see who else is taking part in the bloggers' challenge - hands up if you're getting involved !) and realised just how much they love their tomatoes over at Mission Deli Wraps ! They painted Canary Wharf red last week with their own version of Spain's La Tomatina !

Well, we just happen to have a load of tomatoes in the fridge so that's the obvious place to start this week - for lunches, not for throwing, even if the Madhouse Mini-testers would probably love it !

Sunday : I wasn't sure how we'd manage to incorporate tomatoes into a traditional Sunday roast lunch then realised that this week's Sunday dinner - Pork Orloff - had tomato slices on top - sorted ! (Slightly cheating because I didn't actually know about the challenge yet !)

Monday - Monday is always using-up-the-leftovers day. Wraps with whatever everyone fancied from the fridge - mine was lettuce, cold leftover pork, cheese and cherry tomatoes, with a drizzle of low-fat mayonnaise. (Another meal containing tomatoes even though we didn't know about the challenge yet !)

Tuesday - Lunches are always a rush so anything that can be made in advance is ideal. Quiche is a good standby - we had a cheesy leek, bacon and mushroom quiche but it could easily have had halved cherry tomatoes dotted around the top, which has the added advantages of looking pretty and working towards one of your 5 a day. This still counts though because we had a side salad which included tomatoes. (Phew !)

Wednesday - On to the first day of consciously incorporating tomatoes into the menu ! Today we'll have a tried-and-tested (and dead easy) family fave, Chicken Pesto with Olives & Tomatoes, served with pasta. It's so quick to throw together and everyone loves it.

Thursday - Cheese on toast with tomato wedges. I always love the way you get unmelted cheese hiding under the tomatoes !

Friday - I'll be off at a work meeting so it's lucky there's one of these ready and waiting in the freezer (I made double last time and froze one): a Potato, Courgette & Tomato Lasagne.

Saturday - Juliette loved making this puff-pastry cherry tomato, olive and caper tart so we'll make another one.

If you want a bonus tomato-tastic idea, these cheese spread-stuffed cherry tomatoes were lovely.
