As you may have noticed, I've been giving the Dukan 2 diet a go for the last couple of weeks and it mainly revolves around eating lots of vegetables (cutting down on fruit and focusing on veg instead) along with lean meat and fish. That means loads of white fish, salmon, chicken and ham, so I've been looking for different ways of jazzing them up with marinades, herbs and spices. I usually just put lime juice and garlic pepper on salmon fillets, but when I saw this recipe from the Alaska Seafood Marketing Institute, it looked perfect. They suggest using a whole side of salmon but it worked beautifully on these smaller fillets too.
Grilled salmon with Moroccan spices
ingredients :
salmon fillets
3 tbsp olive oil
2 garlic cloves, crushed
2 tsp cumin seeds
2 tsp ground paprika
Pinch cayenne pepper (optional)
Finely grated zest and juice of 1 lemon
Mix together all of the ingredients and smear over the salmon. Chill for at least half an hour.
Grill for about 20 minutes until cooked through. I served this with a bag of Italian-style frozen veg, but the original recipe suggests a side salad of red onion, tomato and cucumber.
