Heinz Barbecue Sauce recipe #3 : Ultimate Barbecue Baked Beans


Well, if I got your mouths watering with our first cookery challenges for the new Heinz Barbecue Sauces when we made Marinated Chicken Wings (here) and Barbecue Chicken and Bacon Pizza (here), you'll be pleased to know that the final dish is an equally simple and delicious recipe for the Ultimate Barbecue Baked Beans. Sounds like the perfect comfort food for the decidedly damp and chilly spring we're having !

Ultimate Barbecue Baked Beans

Serves: 4

Ingredients:
● 1 large onion, finely chopped
● 100g thick cut smoked back bacon, trimmed of fat and cut into lardons
● 1 tbsp vegetable oil
● 800g Heinz Reduced Salt and Sugar Baked Beanz
● 3 tbsp Heinz Classic Barbecue sauce
● 20g tortilla chips, crushed
● 60g reduced fat hard cheese, grated
● 6 slices of wholemeal bread, toasted

Method:

● Fry the onions and bacon in the oil until golden.

● Add the Heinz Baked Beanz with Heinz Classic Barbecue sauce and heat through.

● Meanwhile mix the crushed tortilla chips with the cheese.

● Top the toast with the beans followed by the tortillas and cheese and place under a preheated medium grill
until melted and golden.

Serve these barbecue beans with sausages as an alternative


I decided to tweak the recipe slightly and serve it as an accompaniment rather than on toast, because both beans on toast and spaghetti on toast are dishes that French people can't get their heads around. "Carbs on carbs" or "a pasta sandwich" are two ways I've heard these British staples described, so they're not French Madhouse Daddy Mike's favourite meal ! I added some mushrooms to the bacon and onions too.


After removing the juices from the mushrooms and the fat from the bacon, I added the beans and the barbecue sauce.


Now, I really couldn't get my head around adding crushed tortilla chips and cheese on top of the beans and the kids looked at me like I'd gone nuts but it was delicious, adding a really interesting crunchy texture and earthy, wheaty taste. I'll definitely be trying this on other dishes, like cheese toasties, baked potatoes and even soups.


We ate ours with chips and beefburgers (it was the kids' choice for lunch today !) and everybody asked for seconds. The barbecue sauce adds a lovely smokiness and depth of flavour that really works well. I'd be tempted to try sneaking some extra veg in there actually - it would definitely work with sweetcorn and red kidney beans, but I'd like to try adding courgettes, grated carrot and peas to it too. I think the barbecue sauce and cheese would get the kids wolfing down their five-a-day !
