This is so simple to throw together (especially using my Jamie Oliver cutting tower which grates things up in seconds) and the kids loved it so I'll definitely be making this again !
Moroccan-style Orange & Carrot Salad
5 carrots, peeled & grated
1 large orange, peeled & chopped into small pieces
a glug of orange juice
a squeeze of lemon juice
a pinch of salt
Mix it all together in a bowl and leave it in the fridge for 1/2 hour before serving for all the flavours to mingle.
In Morocco, this can be served as a starter or as a dessert with added sugar. We used ours in a mixed salad and it was great in place of lettuce for the younger Madhouse Mini-testers who don't like that. It looks lovely and cheerful on the plate too !
