As you may have seen in this week's veg box post, we have lots of lovely lettuces to use up this week, as well as some Fresh Gourmet products to try out, so I've been getting experimental with salads. If I want to get the kids excited about salad, I have to go for lots of bright colours and unusual flavours so this was a great start. It's a totally made up recipe but worked really well !
Sunshine Cod & Mango Salad
ingredients :
several crisp lettuce leaves
1/4 cucumber
a handful of cherry tomatoes
1/2 mango
cooked cod (which had been dipped in seasoned flour - flour mixed with garlic granules, oregano, lemon pepper and salt - and pan fried)
a drizzle of Wagamama spicy chilli, coriander & ginger dressing (which I reviewed here but you could make your own)
a handful of Fresh Gourmet croutons of your choice (I think the Basil Pesto Ciabatta ones go nicely with this dish)
Preparation :
Roughly shred the lettuce with your hands and arrange on a plate. Lay out slices of cucumber and cherry tomato halves.
Place a portion of cold (or slightly warm, if you prefer) cod in the middle and gently flake it with a fork, leaving it in large chunks. Scatter a generous handful of fresh mango over the top and drizzle with spicy dressing.
Finish off with a generous sprinkling of crunchy croutons at the last minute.
