The silly name, inspired by the Dr Seuss classic kids' book, comes from the green peas, the eggs and the hamburger bites in the recipe. It's inspired by the Kefta Meatball Tagine that we discovered in Morocco.
Green, eggs and ham(burger) casserole
ingredients :
2 onions, chopped
1 clove garlic, crushed
2 tins of tomatoes
150g frozen peas
250g minced beef or ready made meatballs
1tsp ras el hanout spice mix or chilli powder
1 egg per person
Gently fry the onion and garlic, then add the tins of tomatoes, a couple of cans of water and the frozen peas. Simmer on a medium heat.
Shape the minced beef into meatballs or use ready made meatballs.You can pre-fry them before adding them to the tomato sauce if you're short on time, or add them raw and wait for them to cook in the hot sauce.This should take about 20 minutes, depending on the size of your meatballs. If they've been precooked, 10 minutes should do it. You may need to add a little extra water to stop the peas burning if it starts to dry out.
A few minutes before serving, make a hole in the meatball mixture and crack an egg into it. Repeat for the number of people you're serving.
Leave to simmer until the eggs are cooked through (about 5 minutes). You can gently ladle over some of the hot sauce to help the tops cook through. The eggs (particularly the yolks) will remain runny though.
You could serve this with couscous or we just added a side serving of toasted pitta bread, to dip into the egg yolks.
