Kelly's of Cornwall ice cream are starting a 'creative kids in the kitchen' campaign and invited us to come up with a fun family recipe using their products. This dessert version of burger and chips that we first tried last summer totally fits the bill.
Ice Cream Burgers & Chips
ingedients (per serving):
1 chocolate filled biscuit (Prince Chocolate Biscuits are ideal because the top looks a bit like sesame seeds to take the illusion even further !)
3 tbsp Kelly’s Clotted Cream & Mint Choc Chip ice cream
1/8 of a fresh pineapple
1tbsp strawberry ice cream sauce
Peel the pineapple and chop it into thick-cut chip-sized slices. Put them on a plate.
Take the chocolate sandwich biscuit and carefully prise it open with a knife. The chocolate filling looks like the burger already but you could add an extra couple of spoonfuls of Kelly's Chocolate Ice Cream then flatten it if you fancy being incredibly indulgent. Don't overfill it or it will be impossible to eat though !
Carefully lay 3tbsp of Kelly’s Clotted Cream & Mint Choc Chip ice cream on top of the "burger" to look like lettuce. Replace the top half of the biscuit and gently press down then put it on the plate, next to the pineapple chips.
Add a dollop of strawberry ice cream sauce "ketchup" on the side of the plate and serve.
Enjoy your meal !
