#leanonturkey Summer Turkey Recipe Challenge : Mediterranean Stuffed Turkey Parcels


BritMums have teamed up with the Lean on Turkey website to launch a new blogger challenge, inviting us to come up with a quick and easy original turkey recipe. Ideally they want something that doesn't take any longer than half an hour to prepare and cook so I've just made up this recipe and clockwatched as I cooked it, to see if came in under 30 minutes. Well, it would have done if I hadn't stopped every couple of minutes to take a photo (which meant I had to wash and dry my hands every time !) and although it may look a bit fiddly, it holds its shape surprisingly well so don't overthink it or try to make it perfect.

Here's the recipe that I used but the beauty of this is that you can tweak it to suit your own personal tastes and whatever you happen to have in the fridge :


Mediterranean Stuffed Turkey Parcels

Preparation time : 5-10 minutes (it gets quicker the more you practise!)
Cooking time : 20-25 minutes

ingredients : per person

1 turkey fillet
2 slices of chorizo
1 slice of goat's cheese
2 cherry tomatoes

to share over several portions :

a couple of cups of breadcrumbs
oregano
salt & pepper
1/2 cup parmesan

1 egg, beaten


Preheat the oven at 180°C. Cut a slice of goat's cheese and 2 slices of chorizo for each person.


Cut the chorizo into small pieces, put it in a bowl and add the chopped cherry tomatoes.


Put the breadcrumbs in a bowl, add the parmesan, some oregano, salt and pepper and mix with your fingers. In a separate bowl, crack and quickly whisk up an egg. Sort out a workstation with all the bowls lined up, an empty plate to work on the turkey parcel and an oven proof dish or roasting tin at the end.


On a plate, lay out a turkey fillet. In the middle, place a slice of goat's cheese and a little pile of chorizo and cherry tomato pieces. Fold over the edges (don't worry if it doesn't look very even or totally sealed, it doesn't seem to matter).


Gently roll the parcel in the bowl of egg, then the bowl of seasoned breadcrumbs and place it in a roasting tin. Bake for 20-25 minutes until cooked through. If you want it to go golden brown, you could put the grill on for the last couple of minutes.


The great thing about this recipe is that it can be modified to suit your mood. Tonight, I made chorizo, goat's cheese and cherry tomatoes filling for Sophie and the adults, Juliette wanted just goat's cheese and Pierre opted for plain crispy coated chicken without any filling at all.



 Another combination that I have used that works really well is Parma ham, goat's cheese and pear. You may have seen my Boursin-stuffed turkey breasts from last week too.


The flavours combine really nicely and the cheesy filling keeps the turkey lovely and moist.
