Kitchen Nomad Globe-Cooking Recipe #8 : Prawn Saganaki (Greece)


I was very excited about trying out this latest recipe from my Kitchen Nomad box because, without even realising it, we'd got into a rut when it came to cooking with prawns. Having discovered that Juliette absolutely loves prawns in crème fraîche with onions, mushrooms and leeks, served with rice, that is what I end up cooking every time we buy prawns. Time to break out of that little routine and try this delicious-looking Prawn Saganaki with feta and tomato sauce. You can see the recipe - another of Tonia Buxton's - on the Kitchen Nomad website.


This recipe needed two ingredients from the Kitchen Nomad box - the olive oil and the tomato sauce.


The only fiddly and time consuming part of the whole recipe is shelling the prawns. Once that's done, it literally takes minutes.


The tomato sauce is quite runny but thickens down to a beautful sauce when combined with onions and garlic.


Throw in the prawns and transfer to an ovenproof dish.


Chunks of soft, warm feta add a lovely saltiness to combine with the sweetness of the tomatoes. I also added a shake of chilli flakes to give it a little kick.

This is absolutely divine and so simple to throw together, even after a long day at work. If you buy ready shelled prawns, you can have the whole thing ready to serve with 10-15 minutes. This can be served with crusty bread (still warm from the bread machine - yum !) or rice, if you want a more substantial meal.
