I was just telling you yesterday about the Unilever Kitchen Brazil Challenge. The kids had asked for homemade burgers so I decided to keep them a fruity, Brazilian-inspired twist.
Fruity Burgers and Coleslaw
ingredients :
for each burger :
1 burger bun (I used Warburtons 1/2 & 1/2 bread rolls)
1 beefburger
fried onions
fried mushrooms
sliced cucumber
sliced tomato
slice of cheddar
Colman's Chilli Mango sauce
Fry the burgers, remove to a plate and fry the onions and mushrooms in the beefburger juices, then return the burgers to the pan to warm them back up.
Cut open the burger buns and squeeze Colman's Chilli Mango sauce on the bottom half. Lay slices of cucumber and cheddar on top. When cooked, add the burger, then the onions and mushrooms and finally the tomato before putting on the top of the burger bun.
for the fruity coleslaw :
1/4 white cabbage
2 carrots
Hellmann's Mayonnaise with a Spark of Chilli
Hellmann's Mayonnaise with a Hint of Caramelised Onion
salt
lemon juice
1/4 can crushed pineapple, drained
Finely shred the white cabbage and carrots. Squeeze in the mayonnaises and mix, adding more until you get the right texture - you want the vegetables totally covered in sauce but not too creamy. Season to taste with the salt and lemon juice. Mix in the pineapple.
This is great as a side serving with the burgers. Add spicy wedges to keep in with the Brazilian theme.
