Instant Dessert Recipe : Choco-changas !



As I told you yesterday, we had a Cinco de Mayo-themed feast of fajitas here at The Madhouse, thanks to the generosity of Discovery who sent us through some Mexican food products to try out. Now, I don't know about you, but whenever we eat fajitas, we always end up with a couple of spare tortillas. Sure enough, out of the eight tortillas in the Perfect Fajitas kit, we ate six (one each and Madhouse Daddy had two) and had two left over. That's not a problem at all - we usually use them up as wraps with cold meat and salad/tomatoes/sweetcorn the next day for lunch - but this time, I decided to try something different and use them as a substitute for pancakes. The result was utterly delicious and took literally two minutes !

We decided to call our chocolate and banana creation Choco-changas, with a nod to the classic Chimichangas, which are deep-fried burritos. These would actually work really well deep fried but we went for a slightly healthier option and used the microwave instead.

Choco-changas


ingredients :

however many leftover flour tortillas you have after making faijitas
1 banana, sliced
chocolate
whipped cream
(optional : a pinch of chilli powder)

The whole point of this dessert was to use up leftovers and avoid food waste (did you see my blogpost about the new Love Food Hate Waste app yesterday? It's a concept I passionately support) so we actually used some leftover chocolate frosting that was lurking in the fridge. You could use proper chocolate though, broken into chunks, or even chocolate sauce or Nutella - whatever takes your fancy. If you want to stay on a Mexican theme and are feeling brave, you could add a sprinkle of chilli in the chocolate sauce - when we tried it, I'm not sure it really added anything to the flavour but it did create a talking point because the kids wouldn't believe that chocolate and chilli was a classic Mexican combination !



Spread your melted chocolate/chocolate sauce over your tortilla and top with sliced banana. Fold over as you would a fajita and heat in the microwave for 30 seconds. If desired, top with whipped cream.



We made one hot and chopped it into slices so that everyone could taste it. The kids loved it so much, they couldn't wait for me to heat the other one and ate it cold. We couldn't decide which one we liked the most actually - cold, you get a definite banana flavour but hot, it's the chocolate taste that comes through. We even thought about trying again with apple slices sprinkled with cinnamon and calling it ... wait for it ! ... Fajit-apple Pie ! The options are limitless.

In any case, I think I've seen the last of my ham and salad wraps for lunch. Whenever we make fajitas now, the kids will want to eat the leftover wraps for dessert !
