#VegBoxChallenge Week 4


In last week's fruit & veg box, I had strawberries, melons, pears and plums, all of which were eaten straight from the fruit bowl. On the veg front, we had new potatoes, red peppers and courgettes. I also had carrots, cucumber, mushrooms, green pepper and onions in the fridge.


The baby grenaille potatoes have turned into our new favourite roast spuds so they were cooked with roast pork again.


I forgot to take a photo so I'll use one from the last time I made it - some of the mushrooms, onions and peppers went into a Smoked Sausage and Bean Casserole. (Click through to see the recipe - it's very quick and simple.)


Madhouse Daddy got involved and knocked up some lovely French Onion Soup.


And the cucumber became raita.

I never found time to make the Potato, Courgette and Tomato Casserole so that's on the cards for next week instead.
