In my last veg box of 2013, I got some rather interesting yellow carrots so I decided to try them out with a Roasted Lemon & Herb Chicken seasoning sachet. It's a quick and simple tray bake that makes a complete meal with no hassle.
You just combine the contents of the sachet with 200ml water.
Fill an ovenproof dish with carrots, potatoes and onions. Pour over half of the seasoning mixture and toss it all so everything is evenly covered.
Lay chicken thighs over the top and drizzle over the rest of the seasoning. Bake in the oven for 45 minutes to an hour.
I love the fact that this is something you can shove in the oven while you get on with other stuff like helping the kids with the homework or doing the washing up and that it just gets on with it all by itself. The delicate flavours of lemon, thyme and basil worked really well with the root veg and didn't overpower the sweeter, milder taste of the yellow carrots. Perfect for a quick midweek meal when you've just rushed in from work.
