Hale & Hearty 4 Grain Pancake Mix

Well, if you've been following my recent blogposts, you'll know that we've been having a major baking-fest here in The Madhouse ! Next up in our kitchen testing was a box of Hale & Hearty Pancake Mix and you can see from the photo just how excited the girls were about trying this out. The mix is very quick to prepare - you just whisk in one egg and some milk.

As they explain on their website, "Hale & Hearty in every respect, this recipe is crammed with our top 4 supergrains, all high in fibre and low in GI. We've also included golden flax seed, rich in omega-3 fatty acids." The mix, which is wheat and gluten-free, contains a mix of Wholegrain rice flour, tapioca flour, milled golden flax seed, wholemeal quinoa flour, wholemeal buckwheat flour, baking powder, teff flour, chickpea flour and sea salt. No chemical nasties or artificial additives in sight.

The girls happily tasted them with sugar, maple syrup, jam and Nutella and declared they were delicious with all of them. I honestly couldn't taste any difference when compared to similar non-gluten-free pancake mixes that I've tried in the past.

The only thing that I did notice was that, with normal pancake mix, the first pancake often sticks or burns then all the others come out much better. This time around, it was the exact opposite. The first one came out lovely and golden then the others started burning a bit on the outside before they were cooked through. (Whether this was down to the pancake mix or me, I have no idea !)

However, even the slightly burnt ones still got the thumbs up from the girls and even Pierre tucked in happily.

For a special treat or a decadent breakfast, they're quick and easy to make, can be used with a wide variety of toppings and are really tasty.
