Morphy Richards £4 Slow Cooker Challenge recipe #1 : Chicken Casserole

A couple of weeks ago, I blogged (here) about a fun project from Morphy Richards who are challenging pennywise slow-cooking mums (or dads !) to come up with a recipe to feed a family of four that won't cost more than £4. Well, I tried out this recipe for Chicken Casserole last night and, as you can see from the photos, it went down well with the whole family. (If you're thinking that two chicken legs won't feed a family of four, it's because the other two (and a half !) plates have already been dished out - see photos below !)

Chicken Casserole


4 chicken legs - £2
2 large onions - 25p
4 large carrots - 30p
a few mushrooms - 25p
2 stock cubes
2 glasses water
salt & black pepper
a good shake of "chicken spice mix" that we brought back from Turkey last year - but any chilli-type spices you have will do to give it a bit of a kick - 20p
2 tbsp Bisto gravy granules - 20p

The kids asked for mash but normally I would have thrown a few potatoes into the slow cooker (80p all in with a bit of butter and milk)

If desired, brown the chicken legs, in the slow cooker if possible (depending on the model) or in a frying pan on the hob (in which case, pour the cooking juices in the slow cooker along with the chicken, it's all extra flavour)

Peel and chop into large chunks the carrots and onions. Halve the mushrooms. Throw them into the slow cooker. Place the chicken legs on top.

Pour in the stock cubes dissolved into water. Season with salt, pepper and spices.

Leave to cook on low setting for 3-4 hours.

Just before you serve, if the sauce is too thin, stir in a couple of spoonfuls of gravy granules to thicken.

Pierre was so keen, he couldn't wait for me to take the photo !!

  7. that looks gorgeous our slow cooker is on all winter and it can get a bit repetative so this looks like something a bit different and i'm gonna have a go at it...
